Healthy Homemade Hamburgers

Welcome to 2011! I thought we would kick off the new year with a healthy start.
Having a toddler to feed, things can get tricky when it comes to getting them to eat vegetables. My son loves pumpkin, sweetcorn and carrots but refuses to eat peas, beans or the like. So I have resorted to hiding them in his food. ;-)

Mixing in spinach to his creamy cheese sauce for macaroni or making an onion and mixed vegetable mix which I freeze and use in these burger patties and any other meaty meal.

Homemade Hamburgers

Ingredients:
400g beef mince
2/3 cup onion and vegetable mix (blitz onions, mixed veg and herbs in your processor for a few seconds on low speed)
2 slices wholewheat bread
1 egg
2 tblsp fresh herbs (parsley, thyme, origanum)
1 ml coriander powder
1 ml cumin powder
freshly ground black pepper and salt to taste
To serve:
lettuce
sliced tomato
onion rings
sauces and relish of choice
hamburger rolls (dark brown health)
grated cheese

Method:
Place all patty ingredients in the food processor and mix on low until well minced.
Make large balls and flatten them with your palms.

Tip: Keeping your hands wet, helps the mixture not to stick to your hands.

Spray a frying pan with cooking spray and fry the patties until well-browned on each side. Add the onion rings to the pan and fry until soft.

You can eat these on their own as they are very filling, or serve them with oven baked potato wedges sprinkled with a little salt and paprika and dried chilli flakes.
