Chicken wraps with Shiitake mushrooms

These yummy wraps were devoured by my 5 year old son, 1 year old daughter and hungry husband :-

Ingredients:
6 Wholewheat tortillas
2 chicken breast fillets sliced
1 onion, sliced lengthways
A few broccoli florettes, blanched
1/2 cup baby sweetcorn, cooked
1/2 cup grated cheddar
1/2 round feta, crumbled
5 leaves lettuce, shredded 
5 leaves spinach, shredded
1/3 cup homemade guacamole (mashed avo, salt, pepper, dash lemon/lime juice)
1/3 cup cottage cheese
1/3 cup hummus
1/2 cup baby tomatoes, sliced
1 carrot, julienned
3 fresh Shiitake mushrooms, sliced
1 zucchini, sliced
1 aubergine, sliced
cumin, coriander, paprika, salt and pepper

Method:
Cook chicken, Shiitake mushrooms, aubergine, onion and zucchini on a baking tray with a little Olive oil and paprika, cumin, coriander, salt and pepper until nicely golden. Warm wraps.
Assemble all ingredients on a platter and dig in!
Assemble the wrap beginning with the guacamole, cottage cheese and humus. Don't overload it or when you come to folding it, it will burst :-) Enjoy!
