For those South Africans who love mielies or sweetcorn as it is known overseas.
This is a delicious, easy bread which has endless possibilities.
Add chilli for a bit of a kick, or some peppers and onion. I have used fresh, flat-leaf parsley, chives and cheeses.
Ingredients:
1 cup stoneground, unbleached cake flour
1 cup mielie meal (Non GM if possible)
3 tsp brown sugar
1 tblsp honey
2 eggs, beaten
2/3 cup milk
1/2 tsp salt
handful fresh parsley and chives, chopped
1 round feta, cubed
100g cheddar/Edam, cubed (4mm x 4mm)
mixed seeds for sprinkling
Method:
Set oven to 200 ' c.
Mix all the ingredients together.
Line a bread tin with baking paper and grease well with baking spray or butter.
Pour mixture into the tin, sprinkle seeds on top and bake in oven for approximately 30 mins until golden on top.
Serve warm with butter :-) Yum!
