A great way to use up bananas that have reached their 'use by' date :-)
Ingredients:
6 medium bananas
1 cup castor sugar
1 tsp bicarb
1 1/2 tsp baking powder
3 eggs
1 tsp vanilla extract
3 tblsp canola oil
1/2 tsp salt
200g butter (soft)
1 tsp cinnamon
1/2 tsp mixed spice
2 tblsp molasses
Method:
Heat oven to 180'c.
Cream butter & sugar by hand with a good whisk. Add eggs and vanilla. Whisk well.
Mash bananas & add cinnamon & mixed spice. Add other ingredients to bananas. Stir to fold. Pour into greased muffin cups in muffin pans. Bake for 20 mins or until a knife comes out clean.
