Home-made Pasta

Something my husband has always wanted to try is home-made, fresh pasta.
Yesterday at my father-in-law's we saw first-hand how to make it. They bought a pasta machine.
It is definitely worth the effort.
My two-year-old son has never devoured pasta with grated cheese on it so quickly before!

Below is the recipe with a few step-by-step pictures on how we did it.

Home-made Pasta:

Ingredients:

3 eggs
300g Farina Tipo “00”. R18.00 for 1kg and you get 9 servings, R2.00 per serving (Food Lovers Market has a good one)
1 tsp salt


Method:

Attach your pasta machine to the side of a working surface and make sure it is tightly secured in place.

Weigh out your flour on a good scale. Add it into a large bowl. Make a well in the centre. Add the eggs. Mix with a fork until well-blended, adding flour in from the sides as you go.

When you have a good, doughy consistency, take it onto a floured surface and begin the kneading process. This should last a good 5 mins. Knead until the dough is pliable, elastic and smooth.


Cover it with cling-wrap and place in the fridge for 30 mins.
Place dough on the floured surface and roll out into 4 pieces about 3/4 cm thick.

Two people are ideally needed for the next step.
One person needs to feed the dough through the top of the pasta machine and turn the handle, while the other, grabs it at the other end and pulls it along as it comes out.

You feed it through around 5 times, starting on setting 7, each time changing changing down a setting on the machine until you reach setting three.

Finally, put on the cutting attachment and choose whether you want fettuccine, spaghetti or linguine. ;-)

Boil in salted water for 2 minutes until al Dente.

Serve with your choice of sauce.

Makes enough for 3 as a main or 4 as a starter.
