I know I said we would start the year off on a healthy note, but this lasagne recipe (based on Delia Smith's Lasagne Al Forno) is an absolute delicious, decadent meal to have on a special occasion. My two-year-old just can't get enough of it!
Lasagne
Ingredients:
Bolognaise Sauce:
500g beef mince
2 cups onion and mixed veg mix
3 garlic cloves
salt and freshly ground black pepper
1/2 grated nutmeg
1/2 tsp white pepper
1 tin chopped tomatoes
4 tablespoons tomato puree/sauce
175ml red wine
fresh parsley
olive oil for frying
Cheese Sauce:
1 litre milk
500ml fresh cream
110g flour
110 g butter
1/2 grated nutmeg
freshly ground black pepper
salt
1/2 tsp white pepper
2 cups cheddar cheese
60g Parmesan cheese
250g Lasagne sheets
Method:
Fry the onion and veg mix, beef mince, garlic, parsley and spices until well-browned.
Add in the tomatoes, tomato puree and red wine and simmer while you make the cheese sauce.
Set your oven to 180'c.
When it comes to making a white sauce, I cheat ;-) Mix the flour and about 1 cup of milk together until thoroughly mixed.
Place butter in the saucepan to melt and then add in your flour and milk whisking with a balloon whisk and adding in the cream and remaining milk.
Stir until it thickens and then add in your nutmeg, salt, pepper, 50g Parmesan and cheddar cheese.
First spoon some Bolognaise sauce into the bottom of a deep baking dish that you have sprayed with cooking spray.
Spoon on some cheese sauce and then layer on the lasagne sheets. Repeat this process ending with a layer of cheese sauce and sprinkle with remaining Parmesan.
Lastly, bake in your oven until golden and bubbling, about 45 mins.
Serve with a very refreshing salad, as this is a very decadent, cheesy meal.
