This is a cheese variation, very delicious and everyone usually eats them up so quickly as they come out of the oven.

Best Ever Scones
Ingredients:
2 cups cake flour
2 eggs
100ml buttermilk (mix milk with vinegar/lemon juice)
2ml salt
100g butter
10ml castor sugar
10ml baking powder
Cheese Variation:
Add the following:
1 cup cheddar cheese grated
60ml Parmesan or 1/2 cup mature cheddar
pinch cayenne pepper
2 tblsp freshly chopped parsley
Only put 5ml castor sugar in instead of 10 ml
Method:
Sift together all the dry ingredients into a bowl. Add the cheeses (keep a small amount for sprinkling), cayenne and parsley.
Cut the butter into cubes, and cut it into the flour. Continue rubbing it in with your fingertips until it resembles breadcrumbs.
Beat the eggs and the buttermilk in a measuring jug.
Add it to the dry ingredients, reserving a small amount for brushing.
Mix to form a soft dough.
Flatten to about 3cm on a floured board. Cut out rounds with high-ball glass or cookie cutter.
Place on a greased baking tray, brush with a little of the buttermilk mixture, sprinkle with cheese and bake in a pre-heated oven of 190'c for +- 15mins.
Serve warm with butter, yum!
Tip: Don't knead the dough, just bring it together quickly, or the scones will be flat.
