We are well into 2011 and I have undertaken a healthy eating plan. I am going to try my best to post up, healthy, interesting and tasty meals as I go about changing the way my family and I eat.
The first of these is my favourite; the wrap.
You can find wholewheat wraps in most stores now. Filling them with healthy, yet delicious fillings and they make wonderful lunches or suppers.
Mexican Chicken Wrap:
Ingredients:
2 chicken breasts, de-boned, skinless and cut into thin strips
8 whole-wheat tortilla wraps
1 onion cut into strips
1 tomato chopped
1/2 cup grated white cheddar cheese
1/2 cup fat free cottage cheese mixed with 1tsp lemon juice
lettuce/baby spinach leaves shredded
Paprika, salt and freshly ground black pepper
1/2 tsp cumin and 1/2 tsp coriander
pinch cayenne pepper
red onion slices (nuked in the microwave for 10 seconds)
mixed sprouts
1 avocado, mashed with salt, black pepper and a little lemon juice
2 sweet potatoes
Method:
Fry the chicken, onion strips, cumin, coriander, paprika and pinch of cayenne with salt and black pepper with a little olive oil.
Assemble all of your filling ingredients and place into bowls for serving.
Slice sweet potato chips and bake in very hot oven with olive oil until golden.
Dry-fry the warps in a frying pan with a little spray 'n cook until warmed.
Assemble your wrap according to your taste.
Serve with the sweet potato fries and enjoy!
