It was my husband and my 7th wedding anniversary and we decided to spend a night at Rain Farm Game and Lodge, just 15 minutes inland from Ballito.
What a wonderful experience! Well worth the money - the night game drive, luxury tent and food were outstanding!
Below is a recipe from their chef Brendan. It is a starter, which we both had.
Poached Pear, pecan and Feta salad on a bed of watercress and rocket with a Balsamic reduction.
Delicious!
Poached Pear, Pecan and Feta salad
Ingredients:
poached pears (tasted like it had a little red wine) added
watercress
balsamic reduction
cucumber ribbons
sliced Danish feta
pecan nuts
Method:
To poach the pears: Wash and peel the pears and poach in water, a pinch of sugar and a little red wine.
Assemble all the ingredients to resemble the pic.
