Bridal Shower Cupcakes

I had the honour recently, of being the Matron of Honour at my close friend's wedding. And of course, I had to plan the bridal shower.
My fool-proof cupcake recipe came to the rescue as the 'goodie' for each guest to take home. They were a great success :-)


Basic Vanilla Cupcakes

Ingredients:

50g butter
100ml sugar
5ml vanilla essence
1 egg
250ml cake flour
5ml baking powder
pinch salt
60ml milk


Method:
Cream butter and gradually add sugar and when the mixture is light and creamy add vanilla and eggs.
Sieve dry ingredients and add to mixture alternating with the milk.
Place spoonfuls of the mixture in greased muffin tins.
Bake for about 15 mins until golden. remove from the oven and allow to cool.


When the cakes are cool, ice with your choice of icing, these have a rich, butter icing: butter, icing sugar and a little milk whipped up in the mixer until light and fluffy.

  1. To make gluten free, replace flour with the premixed gluten free flour available in shops. Kerry uses the one that includes rice flour, tapioca flour and potato flour. Then, to get it to work... Double the eggs, 1.5 times butter and about half the milk - but judge to get the consistency you want. - Comment from Kerry McCormack
