To those of you who will be celebrating Father's day this coming Sunday, here is a delicious recipe for a tasty meal Dad will love!
Meatballs, Cous-Cous and Tomato and Sweet Basil Sauce
Ingredients:
Cous-Cous:
2 tbsp mixed nuts
1 large sprig fresh rosemary chopped finely
salt and freshly ground black pepper
3 tbsp olive oil
1 clove garlic crushed
1 cup cous-cous
1 tsp butter
Fry all ingredients lightly in a saucepan and set aside.
Bring 1 cup of water to the boil and switch off heat. Put cous-cous and a drizzle of olive oil, 1/2 tsp salt into the pot with the water. Close the the lid. Check after 5 mins and stir in the butter and nut and herb mixture with a fork.
Sweet Basil and Tomato Sauce:
1 tin diced tomatoes
1 tsp dried sweet basil (2 heaped tsp fresh)
salt and freshly ground black pepper
1 clove garlic crushed
2 tbsp olive oil
2 tsp Parmesan cheese
Place all ingredients into a saucepan, simmer and reduce down to a thick sauce. Be careful not to overcook.
Meatballs
400g beef mince (or any other meat)
1 onion
2 slices wholewheat bread
1 clove garlic
1 tsp mixed dried mixed herbs (2 heaped tsp fresh)
salt and freshly ground black pepper
1/2 tsp white pepper
1/2 tsp dried coriander
1 carrot
1 egg
Place all ingredients in a food processor and process on lowest speed until well mixed.
Make balls and fry in a little olive oil until well-browned and cooked through.
Enjoy with the cous-cous, sauce and a side salad of baby spinach, feta, tomato and red onion.
