Moreish Cheese and Onion Pies

These moreish little morsels will make your taste buds scream for more!
I would serve them with a fresh garden salad and a refreshing beer.

Moreish Cheese and Onion Pies:
Notice the one missing on the right - my 3-year-old son got hold of it!


Ingredients: (Makes 8)
1 roll ready-to-roll Puff Pastry (or make your own!)
1 280g block of mature cheddar cheese grated
2 heaped tbsp corn flour
2 tbsp plain yoghurt
1.5 tbsp milk
pinch cayenne pepper
1/2 tsp paprika
1/4 tsp mustard powder
1/4 tsp white pepper
pinch freshly ground black pepper
+_ 1tsp salt
3 onions grated
3 medium potatoes grated
1 little olive oil for frying


Method: 
Grate the potatoes and onions in a food processor.
Add a splash of olive oil to a saucepan.
Add the potatoes, onions, spices and stir on a medium heat.
Grate the cheese.
Add it into the saucepan slowly stirring.
Mix together the yoghurt, corn flour and milk and stir into the cheese mixture.
Take it off the heat. Let the mixture cool. Before filling the pastry.

Cut out 8 rectangles of pastry and place a good helping of filling in the middle of each.
brush the outer rims of pastry with a little beaten egg. Fold over and use a fork to seal.
Poke  a few holes in the tops and brush with beaten egg.
Bake at 200'c for about 30mins until golden brown :-)
