Happy New Year!
Well, the past few months have been hectic for me! I am 13 weeks pregnant and have suffered (still suffering) from terrible pregnancy sickness. So needless to say, cooking has taken a back-seat unfortunately!
I managed to bring myself to start baking again. These delightful little morsels will have your hand in the cookie jar a little more often at tea-time (or inbetween meals). Enjoy!
Shortbread
Ingredients:
250g butter
125g castor sugar
pinch salt
3 cups cake flour
1/2 tsp vanilla essence/extract
Method:
Cream butter, sugar and vanilla until light and fluffy. Knead in sifted flour and salt for 10 mins. Press into a paper lined baking tray to approx. 1cm thick. Prick surface with a fork well. Bake at 160'c for +- 60 mins until slightly coloured. Cut into fingers and sprinkle with castor sugar.
Serve with tea/coffee.
