Croque Monsieur

This is comfort food at it's best. I decided to finally try my hand at making these delightful, cheesy sandwiches - and now I'm hooked :-)

Croque Monsieur

Ingredients:
4 slices sourdough bread (good quality)
30g butter
Dijon mustard
2 slices good quality ham (black forest - not processed)
120 g grated Gruyere cheese (or strong white cheddar)
Thinly sliced Gruyere or white cheddar
2 tblsp flour
1 cup milk
Dash nutmeg
Salt and pepper

Method:

Make the cheese sauce - mix flour, milk, 100g cheese, 1tsp Dijon mustard, dash nutmeg in a saucepan on medium heat until thick.

Spread a little mustard on the slices of bread. Layer cheese slices, then ham and then cheese. Place the other bread slices on top - mustard side on top of the cheese . Press down well.
Butter the tops of the sandwiches and fry in a pan until golden.

Remove from pan and place in a baking tray. Spoon cheese sauce on top and sprinkle with remaining grated cheese. Place under the grill until bubbling and golden. Serve immediately :-)
