Relish the thought!

I am going to do a series of recipes for relishes, preserves and pastes. Making your own really is satisfying. Below is the recipe for a tomato and onion relish that is delicious used on a cheese board, as a topping for a gourmet hot dog or anything that needs a sweet, tangy taste.


Tomato and Onion Relish:
Ingredients:
2 onions, diced
3 tomatoes, diced
1 clove garlic, crushed
3 tbsp olive oil
1 tbsp brown sugar
1 tsp paprika
1/2 tsp chilli, garlic and ginger paste
1tbsp butter
salt and pepper to taste
1/2 cup water to cover

Method: 
Combine all ingredients in either a saucepan or microwave dish with a cover. Bring to boil and allow to simmer until onions and tomatoes are well cooked and combined.
Prepare your glass jar by boiling it for 5 mins and pour cooled contents into the jar. Cover with a piece of wax paper and lid. Stores for a while in the fridge (but I doubt it will last that long!).
