Homemade Fish and Chips with Tzaziki

This is a great meal for a Friday night. I have always loved crispy, fried fish and chips and have tried numerous batters and crumbs. I found this batter recipe to be quite good as a basic batter.

Homemade Fish and Chips with Tzaziki.



Ingredients:
1 large piece hake or kingklip, cut from frozen into smallish slices
4 large firm cooking potatoes
flour for dusting
Oil for frying

Dip fish into the flour first and then into the batter and fry (either pan fry in oil or deep-fry) until golden brown. About 3/4 mins on each side.
To make the chips, put some oil onto an oven tray and lay the thickly-cut potato chips evenly down. Sprinkle with salt and paprika and bake until golden.

Serve the fish with the Tzatziki and chips and veggies with lemon wedges.

Tzatziki:
1/2 cup Greek yoghurt
1/2 tbsp chopped chives and dill
1/3 cucumber grated and drained on between kitchen paper
salt and pepper to taste
1 clove garlic crushed
1 tsp olive oil
1 tsp lemon zest

Grate the cucumbers and season lightly with salt and drain between two sheets of kitchen paper.
Mix remaining ingredients together and add cucumber when drained.

Batter:
1 cup flour
1 tbsp salt
1 tsp baking pweder
1 tbsp white vinegar
1 cup water
1 tsp paprika
1/2 tsp white pepper

Mix together.
