This is a delicious vegetarian-type meal.
Ingredients:
1 cup Polenta
1cup milk
Salt and pepper
1 cup white cheddar cheese
15g butter
Method:
Bring 4 cups water to boil in a deep pot. Slowly add Polenta and cook for about 5 mins. Add cheese and butter and season with stand pepper. Pour into a square dish lined with greased baking paper and refrigerate. Once set cut into desired doses and bake on an oiled baking tray till golden brown. Turning once.
Mushrooms:
500g Shiitake, button and portabellini mushrooms chopped
3 sprigs Fresh Thyme
Olive oil
1 tbsp butter
1/2 tbsp cumin
Fry mushrooms, thyme in oil and butter until nicely browned. Season with salt and pepper.
Baby tomatoes
Feta
Balsamic vinegar
Olive oil
Rocket
Roast tomatoes with a little Balsamic vinegar and Olive oil.
Assemble all the elements of the dish on a plate and top rocket with roasted tomatoes and feta.
