Sumptious Salads

Over the next few posts I am going to give you some delicious, filling salads to make that are sure to get your children eating them - and your husband's for those who don't eat 'rabbit food'!
I used the leaves from the cabbages I am growing in my garden - lovely and fresh!
First up is:

Beetroot, Feta and Baby red cabbage salad with a Lime Vinigarette.



Ingredients:
2 large beetroots, diced and boiled until tender and cooled
1/2 red onions sliced thinly
1 round/square creamy Danish feta, broken
8-10 small red cabbage leaves, chopped roughly
4 green cabbage leaves, chopped roughly

Vinegarette:
Juice of 1 lime
3 tblsp White, wine vinegar
3 tblsp olive oil
salt and pepper to taste

Method:
Assemble all the salad ingredients in a beautiful bowl.
Mix together the vinegarette and pout over the salad.
Serve as an accompaniment to whole stuffed muchrooms or a lamb dish. Goes remarkably well with a delicious bacon anc cheese quiche.
