A different take on Gordon Ramsay's Chicken Marinade Recipe:


Ingredients:
1 tblsp rock salt
2 tsp cinnamon
2 garlic cloves (to taste)
1 thumb fresh ginger
1 handful fennel fronds
1 handful tarrogn
2 tblsp white wine vinegar
1/2 cuo olive oil
1 tblsp miso paste
1 tsp lemon zest
ground black pepper

Method:
Finely chop garlic and ginger and pound with salt and spices  in a mortar and pestle.
Add a little olive oil to make a paste as you grind it up.
Finely chop herbs and add them in, add miso paste, continue to grind adding olive oil.
Add white wine vinegar and lemon zest last.
It should be a marinade and not a paste  at this point.
