This is by far the most delicious meal I have eaten in a while!
Needless to say, I ate way more than I should have :-) I have borrowed Jamie Oliver's base recipe and changed it to suit my tastes.
Ingredients:
Falafel:
1 400g tin chickpeas
1 400g tin beans
zest of 1 lime
2/3 cup GMO-free, stoneground cake flour (more if needed)
a small bunch sweet basil leaves/cilantro
1/2 tsp cinnamon
1 tblsp paprika
1 tsp dried cumin
1 tsp dried coriander
2 tblsp olive oil
salt and pepper
Guacamole:
1 ripe avocado
1 tblsp lime juice
1 tsp spring onions
salt and pepper
Chicken:
2 chicken breasts sliced
1 red onion sliced
1 tblsp paprika
dash cayenne
salt and pepper
To serve:
Sliced tomatoes, lettuce, grated grana padana cheese, chopped spring onions, rotis/wraps, carrot ribbons, cucumber ribbons
Method:
Mix all falafel ingredients in a food processor until smooth.
The mixture should come away from the sides and not be sticky. More like a very soft dough.
make small 'patties' and shallow fry in olive oil until golden on both sides.
Set aside.
Fry the chicken strips and red onion with the paprika, cayenne, salt & pepper until tender (+-2-3 mins).
Blitz guacamole ingredients with a hand blender until smooth.
Set out all the accompaniements on a beautful platter and dig in! Let your guests or family create their own meal from the fresh ingredients before them :-) Your kids will love the freedom :-)
