This is the most delicious soup I've made! Perfect for the colder weather.
Ingredients:
1 head of broccoli
3 potatoes
1 onion
2 rashers streaky, dry-cured bacon

1 tablespoon Grated grana padano or parmesan cheese
Oil for frying
Salt, black pepper

1/2 tsp Dried porcini and shittake mushroom powder (available from www.mushrush.co.za)

Method:
Cut broccoli, onion and potatoes into rough chunks.
Fry these ingredients with the bacon in a large pot for a few minutes.
Cover with water and bring to boil.
Lower the heat and simmer intil veg is tender. Season to taste. Add grated cheese.
Take off the heat.
Use your stick blender to blend the soup until smooth. Add a little boiled water if too thick.
