The tastiest & easiest puff pastry ever!

Puff pastry is something that many people seem to shy away from making. I found the best and easiest recipe and have amended it slightly to make this pastry.
You can fill it with anything, make cheese straws out of it, use it for sausage rolls and pastries and pies.

I have included an easy spinach, mushroom and cheese recipe.

Rough Puff pastry:
Ingredients:
250g cake flour
250g butter
1 tsp fine salt
150 ml cold water

Method:
Pulse the flour, butter and salt in the food processor a few times. It is very important to still have blobs of butter interspersed in the flour. It must NOT look like breadcrumbs - then you have gone too far!
Take the food processor bowl off and slowly add the cold water and mix with your hands into a rough ball. Refrigerate for 30 mins.

Roll out desired shapes and thickness (+-5mm) and fill with any filling you desire.
Bake on 220'c. for +-40 mins.

Spinach, mushroom and cheese filling:
Ingredients:
baby leaf spinach
grated white cheddar/mature cheddar/grana padano cheese
Sliced and fried mushrooms
pepper and salt to taste

Method:
Mix ingredients together and use to fill your pastry.
