Foraging in Blarney

I had an incredible morning walking along the Blarney road foraging for blackberries :-)
There are hazardous spiders and nettles to get in your way - next time I will likely wear gloves!
But what a beautiful time, nature at it's best.

I picked enough blackberries to make three, large jars of jam and there was still a punnet of fresh berries left over for the week.

See my jam recipe below and some pics of the yummy scones, lasagne, rosemary and olive oil bread that I just had to make!

Homemade, foraged, Blackberry Jam
Blackberry Jam: 
Ingredients: 
1.5 kg blackberries (any berries will do)
2 cups brown sugar
1/2 lemon and zest
Just enough water to cover the berries











Method:
Bring all ingredients to the boil in a saucepan.
DO NOT COVER.
Allow to reduce until a syrupy consistency.
Sterilize glass jars by boiling or place in a microwave sterilizer. Pour boiling jam into the jars and seal immediately. Place in the fridge on a tea towel.
Enjoy with scones and cream :-)
