I have a quick, delicious recipe for one portion here, just double it for two people.
Ingredients:
1 small butternut, cubed,
1/2 onion, quartered
3 sage leaves
butter
salt and pepper and paprika to taste
Olive oil
1/2 cup chicken stock
Method:
Roast butternut, onion, sage and knob of butter and Olive oil in oven until tender. Blitz in a blender with a little hot chicken stock till smooth.
