This is a dish inspired by Gordon Ramsay. A slow-cooked lamb stew, perfect for those cold winter nights ;-) Your family will not be able to get enough of this one :-) Enjoy!
Slow Cooked Lamb Stew
Ingredients:
500g stewing lamb
2 medium onions roughly chopped
1 handful green beans, chopped
1/4 butternut squash, cubed
3 cups stock (beef/vegetable)
200ml red wine
salt and pepper to taste
2 sprigs rosemary,
1 sprig mint
1 handful patty pans, halved
3 potatoes, peeled and cubed
2 carrots, peeled and cubed
2 tsp paprika
1 tsp cumin and coriander powder
3 cloves garlic, roughly chopped
3 tablespoons cornflour
2 tablespoons Lea and Perrins Worcster Sauce
olive oil
brown rice to serve
Method:
Start by having a very hot, large saucepan. Add a good glug of olive oil. Add your meat and brown well on all sides tossing in the fat. Season well. Add chopped onions and garlic. Fry until soft.
Deglaze the pan with 100ml red wine. Add stock and Worcster Sauce. Add vegetables and pull leaves off of one rosemary sprig and add. Put in the whole rosemary sprig and mint leaves keeping a few for the end.
Add the remaining red wine. Bring to the boil. Add cornflour mixed with a little water 30 mins before the end of the cooking time to thicken slightly. Taste the seasoning.
Reduce heat and simmer for 2 1/2 hours.
Sprinkle mint leaves on top and serve with brown rice and a glass of good red wine :-)
