Today I have a delicious, easy Sunday supper recipe :-) Especially for my friend Julia Kruger :-)
This is inspired by Heston Blumenthal's perfect fish 'n chips recipe.
Beer battered hake with Pea and Mint puree and sweet potato chips:
Ingredients:
A few good quality pieces of hake
1 can beer
3/4 cup cake flour
1/4 cup rice flour
+_ 1/2 tsp salt & pepper
dash of white pepper
dash of paprika
1 1/2 cup frozen baby peas
2 sprigs chopped, fresh mint
1 heaped tablespoon butter
squeeze fresh lemon juice
salt & pepper
1 table spoon creme fraiche (optional but makes it creamy)
2 large sweet potatoes, peeled and thick cut
oil for frying
Method:
Bring baby peas to the boil, then switch off and drain.
Add mint, season to taste with salt & pepper, butter and creme fraiche, and blitz with your stick blender in the saucepan until smooth. Put lid on until serving time.
Boil sweet potato fries for 10 mins.
Drain sweet potatoes. Dry out saucepan. Fill with oil. Dry chips in a dishcloth.
Fry the sweet potatoes in canola oil for +_10 mins until crispy. Drain on baking paper sprinkle with salt and paprika.
While the veg is boiling, make fish batter by combining all ingredients together.
Dip fish in batter and fry in the same oil as the chips.
Serve hot :-) Enjoy!
